Beautiful stack of pancakes by Eileen. Thank you so much!
Ingredients:
- 3 eggs, separated
- 1 pinch of salt
- 3 tablespoons of maple syrup
- 1 tbsp organic Matcha tea
- 500 ml buttermilk
- 300 g flour type 405 (if in Germany), otherwise choose a fine flour
- 75 g sugar
- 2 teaspoons of baking soda
Instructions:
- Beat the egg whites with a pinch of salt until stiff for 2 minutes.
- Mix the egg yolks and sugar until the sugar has dissolved.
- Add 3 tbsp maple syrup and sieve in Matcha.
- Carefully stir in buttermilk (splashing!)
- Mix the flour and baking powder and gradually add to the liquid.
- Bake in a waffle iron, but also good for pancakes.
- Serve with vanilla sauce or yogurt and fruit, with Nutella or jam.
